2. Instructions to make Lamington cake
2.1 Prepare the Sponge Cake
- Preheat your oven to 350°F (180°C). Grease and flour a 9x13-inch rectangular cake pan.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until well combined.
- Pour the cake batter into the prepared pan and spread it out evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool completely in the pan.
2.2 Cut and Assemble the Cake
Once the cake has cooled, and carefully remove it from the pan.
Cut the cake in half horizontally, creating two layers.
2.3 Prepare the Chocolate Icing
In a saucepan over low heat, combine the powdered sugar, cocoa powder, butter, milk, and vanilla extract.
Stir continuously until the mixture is smooth and well combined. It should be a thick, but pourable consistency. Add more milk if needed.
2.5 Coat the Cake
Place one of the cake layers on a serving platter.
Pour a portion of the chocolate icing over the top of the cake layer, spreading it evenly to cover the surface.
Carefully place the second cake layer on top and pour the remaining chocolate icing over the entire cake, letting it drip down the sides.
Use a spatula to smooth the icing over the sides, ensuring the entire cake is coated.
2.6 Coat with Desiccated Coconut
Sprinkle the desiccated coconut generously over the top and sides of the iced cake. Press the coconut into the icing to adhere.
2.7 Let It Set
Allow the lamington cake to set for a few hours or overnight. This will give the icing time to firm up and the flavors to meld together.
